One of the things you’ll notice on the ketogenic diet is that when you go looking for food you’ll be looking in the refrigerator instead of the cabinet. Ketogenic foods tend to be perishable, which is generally considered a positive for nutritional health. Except for nuts, seeds, and oils, which can last for a while at room temperature (although refrigerating them helps to hold off rancidity and is a smart thing to do), as well as some dehydrated vegetable products (e.g., seaweed, kale chips) there aren’t many keto-friendly foods that are shelf-stable. It’s usually a mix of flour, sugar, and harmful trans fats that allow food products to sit for months on the shelf without going bad (think of powdered doughnuts, breakfast cereal, crackers, and candy of all kinds). Any nutritionist would tell you to eat as little as possible of these foods to avoid gaining weight and becoming diabetic. And yet, most will still criticize the ketogenic diet as unhealthy. It’s largely ignorance of the foods eaten on the diet that drives this perspective. If you look closely at the food allowed on the ketogenic diet you’ll find that this eating pattern automatically nudges you toward the type of healthful, whole foods diet that is widely recommended for optimal health.
